Irene made apple sauce and spaetzle while I had a massage. Then I spatchcocked the turkey and put it in nearly a gallon of buttermilk with just as nearly a cup of koshering salt.

The double layer of paper towel is a marinade trick: it wicks the marinade to any part that may pop up above the liquid and lets it participate and keeps it moist.
