Christmas Dinner: smoked turkey…

Christmas Dinner: smoked turkey, wet brined, coated under the skin with a maple bourbon herb butter and rib rub mixture, the skin brushed with the same in melted form. All the bits and some mirepoix and garlic turned into a lovely jus to turn a light roux into turkey gravy. Served with yams, sliced, sprinkled with cayenne pepper and cinnamon and roasted, and Brussels Sprouts, soaked in melted bacon fat, then roasted.
