Dinner tonight: ribeye, cooked sous-vide, finished by reverse searing in cast iron with a simple mounted pan sauce. With steakhouse style creamed spinach (spinach fried in extra-virgin olive oil, with some salt, white pepper, and cardamom, finished with cream cheese).

Served at Irene’s request with a nice port.
