For dinner I’m thinking a cream of asparagus soup, followed by pork chops with steamed asparagus with Hollandaise sauce (if I can think of something to do with the by now 20+ egg whites) or a lemon vinaigrette), “Algerian potatoes” (sweet potatoes, pureed, flavored with chestnut puree, thickened with egg yolks, formed in triangular spindles, covered in bread crumbs and fried in clarified butter), with creme brulee for desert.
