I’m thinking of shrimp and grits. I’m planning to apply what I’ve learned from experimenting with how to make risotto to making grits, and the work I’ve been doing on deconstructing and reconstructing European farmers’ dishes to separately preparing shrimp, mushroom, cooking liquid for the grits, and more.
