Irene’s not feeling well so she got to pick from a range of dishes.

She picked cream of mushroom soup (I had a ton if fresh mushrooms) with twice toasted bread with whole garlic cloves baked into it, richly slathered with Kerrygold Irish butter.

Since I need more animal protein in my diet, a fried chicken as chicken dumplings: floured richly spiced and herbed chicken thigh pieces and the remnants, with a schmaltz and flour roux and chicken stock veloute with the same spices and herbs as the chicken echoed to dip in.
