Planning Easter dinner

Easter dinner will be lamb. More specifically, it will be butterflied leg of lamb, stuffed with goat cheese, spinach, pine nuts, Granny Smith apples, and mint, smoked, with a spinach salad from fresh baby spinach, fresh strawberries, slivered almonds, toasted pine nuts, and homemade hot bacon dressing, and black wild rice, cooked in Cointreau, with candied ginger, dried cranberries, mandarin segments, almonds, and mint.

To accompany it I am thinking the awesomest of champagnes, my beloved Veuve Cliquot Rosé 2008 Reserve!
