Saturday we’re going German: sauerkraut (well drained, fried up), mashed together with Yukon Gold potatoes, whipped with bacon grease, and enriched with fried up bacon bits. Served with bratwurst, boiled in onions and beer, then fried in bacon grease until dark, taken out and sliced, the pan deglazed with some Bourbon, and the slices finished with some butter. And of course Wiener Schnitzel – though not Austrian style: I’m going with boneless center pork chops for the meat – flowered, dredged in an egg wash, breaded using panko, pan fried in oil, then finished in the oven. Served with a slice of lemon only.
