I read sous-vide bone marrow somewhere and now it’s on my mind. I also know I have several pounds of gorgeous marrow bones in the freezer …
Sous-vide cook it, char it with a torch, some coarse sea salt and fresh ground black pepper, some roasted garlic, some fresh herbs … Or maybe pesto, or Chimichurri.
