Today’s brunch. Sautéed spinach and cheese (Gouda: the young Gouda is just a phenomenal melting cheese to cook with) omelette, with herbs blended into the batter. Served with thick cut bacon bits, rendered, then dried out with quartered crimini mushrooms, deglazed and finished off with Irish Whiskey on buttered (Kerrygold salted Irish butter) toast of country white with whole roasted garlic cloves in it.
