Tomorrow I’ll be cold smoking a 100-ish hard steamed eggs…

Tomorrow I’ll be cold smoking a 100-ish hard steamed eggs, thin slices of cheddar and Monterey Jack cheese, and 9 pounds of wet brined pork belly. I’m thinking apple wood.

After that we’ll switch to hot smoking cheese filled jalapenos (unfortunately for mostly vegetarians so not bacon wrapped, though I’ll wrap some for our family) and taking some of the newly made bacon and making smoked candied bacon. I’m thinking cherry wood.
